Banana Nut Applesauce Squares


Crunchy squares of goodness.
  • 2.5 tsp baking powder (aluminum free)

  • 2 c various flours (coconut, almond, brown rice)

  • 1 tablespoon flaxseed meal

  • 1/3 c each almond & pistachio nuts chopped fine

  • 1/4 tsp lavender

  • 1 tbsp red palm and 1 tbsp coconut oil

  • 1 tbsp Manuka honey or agave syrup

  • 1/4 tsp cinnamon

  • 1/4 c organic unsweetened apple sauce

  • 1/2 c chop, pureed

  • 1 very ripe banana

  1. Mix dry ingredients in a bowl to blend.

  2. Puree the chop in a food processor.

  3. Add wet ingredients and blend.

  4. Add dry ingredients (except for nuts) and mix together.

  5. Add nuts and pulse to combine.

  6. Spread it out with damp hands on parchment paper on a cookie sheet.

  7. Bake at 350 deg F for 30 min; turn it over at the 20 minute mark to dry up the underside.

  8. Cut it into chunks as soon as it is done and then leave it in the hot oven to dry out.

  9. Put it in an open container and into the fridge so it dries and gets crunchy (like a biscotti).
